Jalapeño Chilli Uses & Growth

The Jalapeño Chilli is one of the most commonly recognised fresh chillies in the market worldwide, which is predominately due to its appearance on pizza toppings, and the popular pickled variety available at supermarkets. The Jalapeño offers a mild to medium flavour profile and is a must-have for chefs and cooks across the globe.

The Jalapeño originated in Mexico and is named after the city of Xalapa (Jalapa). A mature Jalapeño Chilli is 5–10 cm long and has a round, firm, smooth flesh which is thick-skinned and crunchy. It can have a range of pungency, with Scoville heat units of 3,500 to 8,000.

Despite it most commonly being picked and consumed whilst still green, the Jalapeño actually matures to a vibrant red colour, and gets hotter in the process! Until the rise of the famous Siracha style of Chilli sauce, much of the red Jalapeño crop was wasted across the Western World. The Red Jalapeño is the base of this famous sauce.

What To Expect in 2019-2020

2019 has also seen an emergence in the BBQ rubs market with red, green and smoked Jalapeño playing a major part.

Expect to see changes to the versatility and usage of the Jalapeño in the next 18 months. Within Australia, we also expect to see a requirement for ‘Australian Country of Origin’ produce. We will start to see this product used as a filler in burgers, bread, chicken, cheeses, and hummus, rather than just the usual sauces and dips that we know well. This innovation takes a familiar product that the market understands, and uses it in a unique way to introduce new profiles and attract new users.

Siracha- Style Sauce

Siracha is a style of sauce that has become the largest trending chilli sauce within the last year; It is based on the famous Thai-inspired hot sauce (also known as rooster sauce) you love to put on everything.

A traditional Siracha uses the red Jalapeño as a base which is blended into a fine process and then fermented over time with distilled vinegar, garlic, sugar, and salt. You will also see some green Siracha style sauces on the market using the green Jalapeño.

Chipotle Chilli Sauce

Chipotle Chillies are smoke-dried ripe Jalapeño Chillies. They are mainly used in Mexican-inspired cuisines, such as Tex-Mex and Southwestern dishes. Throughout Australia, the majority of Chipotle products use the Red Jalapeño, although worldwide you will see Guajillo Chilli, Anaheim Chilli and Wax Peppers as their base. Chipotle sauces have become very popular globally and add a kick to recipes like fish tacos, lasagna, fried chicken and Mexican mole sauce.
